I’m in the midst of some of my most favourite people in the world. My maternal grandmother, my aunt and my dearmost sweet little cousin sister arrived a few days ago. The moment my grandmother held my son is one of my most cherished moments. She was looking forward to this day and her joy of holding her first great-grandchild was evident to everyone around.
My maternal aunt lived in the tea estates for many years. My sister and I have such wonderful fairytale like memories of holidays spent with her and her family. The prim and proper British lifestyle is still rampant in the estates. Beautiful trees and plants, pristine blue skies, fresh air, lavish gardens, most charming bungalows, well-laid tables with enticing food, interesting conversations and hospitable people are some of the vivid visions I have of the time spent there during our annual holidays.
Butter roasted bananas in caramel syrup was served to my aunt during one of her recent visits to a friend’s estate. When she was describing it to me, what struck me was its simplicity and I asked her to make it for divinetaste. It sounds and looks exotic but is really simple to make. It can be a fantastic dessert in a well planned menu.
Butter roasted Bananas in Caramel syrup Recipe
You can substitute the butter with any sweet smelling vegetable oil and the bananas with other fruits. Vegans can substitute the butter with vegetable margarine or any other vegan butter.
Ingredients:
8 small or 4 medium sized bananas
2 tsp butter or oilFor the caramel syrup:
½ cup (60 ml) sugar
1/3 cup (80 ml) waterMethod:
To make the caramel syrup:
In a heavy bottomed vessel, melt the sugar while stirring it continuously on a medium low flame. Continue heating until the sugar melts completely and turns into a nice golden brown colour. Pour in the water. The sugar may turn lumpy at this stage. Turn the flame to medium and continue cooking until the sugar dissolves completely and the liquid comes to a boil. Continue cooking for another 3 to 4 minutes until the mixture is well blended.For the bananas:
Cut the bananas lengthwise. Heat the butter in a frying pan or skillet and cook the bananas until they are nice brown in colour.
To serve:
Place the bananas on a plate. Pour the syrup over the bananas and serve.

Nice recipe, which estates were ur aunt and uncle in? Cause even we were in the estates for many years. I possibly may know your aunt and uncle. The estate social is sure fun, we really miss it in the city.
